Ingredients
  

  • For the Salad:
  • 4 cups mixed greens (baby spinach, arugula, or spring mix)
  • 2 medium apples, thinly sliced (Granny Smith or Honeycrisp work well)
  • 1/2 cup walnuts, toasted
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup crumbled feta or goat cheese
  • For the Maple Vinaigrette:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Toast Walnuts : Place 1/2 cup walnuts in a dry skillet over medium heat. Stir frequently until fragrant and lightly golden, about 3–5 minutes. Remove from heat and let cool.
  • Prepare Dressing : In a small bowl, whisk together 3 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tsp Dijon mustard, 1/4 tsp salt, and 1/4 tsp black pepper until emulsified.
  • Prepare Salad Ingredients : Wash and dry 4 cups mixed greens. Thinly slice 2 apples. Crumble 1/4 cup cheese (feta or goat cheese).
  • Assemble Salad : In a large salad bowl, combine mixed greens, apple slices, toasted walnuts, dried cranberries (if using), and cheese.
  • Dress Salad: Drizzle maple vinaigrette over the salad and gently toss to coat evenly.
  • Serve : Transfer to serving plates or serve family-style in the salad bowl.
