Ingredients
  

  • 4 medium beets, peeled and cut into wedges
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • Optional garnish: fresh thyme, parsley, or crumbled goat cheese

Instructions
 

  • Preheat Oven : Set oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
  • Prepare Beets : Peel and cut the beets into wedges or cubes of even size to ensure uniform cooking.
  • Season Beets : Place beets in a bowl and toss with olive oil, salt, and black pepper. Spread evenly on the prepared baking sheet.
  • Roast Beets : Roast in the preheated oven for 35–40 minutes, tossing halfway through, until tender and slightly caramelized.
  • Prepare Balsamic Glaze : While beets roast, combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Simmer on low-medium heat for 3–5 minutes until slightly thickened.
  • Glaze Beets : Remove roasted beets from oven and drizzle with the balsamic glaze. Toss gently to coat evenly.
  • Serve : Transfer beets to a serving dish. Garnish with fresh thyme, parsley, or crumbled goat cheese, if desired.
