Step 1: Prepare the Pork Chops : Pat the pork chops dry with paper towels. This helps achieve a nice sear. Rub each chop evenly with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Sear the Pork Chops : In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F / 63°C). Remove the chops from the pan and set aside.
Step 3: Prepare the Honey Glaze : In the same skillet, reduce heat to medium. Add butter and let it melt. Stir in minced garlic and sauté for about 30 seconds until fragrant. Add honey, Dijon mustard, soy sauce, apple cider vinegar, and an extra teaspoon of Cajun seasoning. Stir until combined and slightly thickened, about 2–3 minutes.
Step 4: Coat the Pork Chops : Return the pork chops to the skillet, spoon the honey glaze over the top, and let them simmer for 2 minutes. The glaze should bubble and coat the meat beautifully.
Step 5: Serve : Remove from heat and let rest for 3–5 minutes before serving. Drizzle any extra glaze from the pan over the pork chops.
