For the Chipotle Chicken
- 1 lb 450 g boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 –2 chipotle peppers in adobo sauce minced
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and black pepper to taste
- Juice of 1 lime
For the Rice Bowl
- 2 cups cooked white or brown rice
- 1 cup black beans or pinto beans drained and rinsed
- 1 cup corn kernels fresh, canned, or frozen
- 1 avocado sliced
- ½ cup cherry tomatoes halved
- ¼ cup chopped fresh cilantro
- ¼ cup shredded cheese optional
- Lime wedges for serving
Marinate the Chicken
In a bowl, combine olive oil, minced chipotle peppers, garlic, cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Add chicken and coat evenly. Let marinate for 20–30 minutes.

Assemble the Bowls
Divide rice evenly into 4 bowls. Top each with beans, corn, sliced chipotle chicken, avocado, cherry tomatoes, shredded cheese (if using), and fresh cilantro.
