Ingredients
  

  • For the Marinade:
  • 4 boneless pork chops (about 1-inch thick)
  • 2 tbsp chipotle peppers in adobo sauce (finely minced)
  • 2 tbsp fresh lime juice (plus zest of 1 lime)
  • 2 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp honey or brown sugar (for balance)
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • For Garnish:
  • Fresh cilantro (chopped)
  • Lime wedges

Instructions
 

  • Prepare Marinade : In a bowl, whisk together minced chipotle peppers, lime juice, lime zest, olive oil, garlic, honey, cumin, paprika, salt, and pepper.
  • Marinate Pork Chops : Place pork chops in a resealable bag or shallow dish. Pour marinade over them, making sure they’re well coated. Cover and refrigerate for 30 minutes to 2 hours (the longer, the better).
  • Choose Cooking Method : Grill : Preheat grill to medium-high heat. Grill pork chops 4–5 minutes per side until internal temp reaches 145°F (63°C).
  • Pan-Sear : Heat skillet with 1 tbsp oil. Cook pork chops 4–5 minutes per side until golden brown and cooked through.
  • Bake : Preheat oven to 400°F (200°C). Place chops in baking dish, bake 20–25 minutes, or until fully cooked.
  • Rest u0026 Serve : Remove pork chops from heat and let rest for 5 minutes before slicing. Garnish with cilantro and lime wedges.
