Ingredients
  

  • For the Meatloaf:
  • 1 ½ lbs ground beef (80/20 blend recommended)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme
  • 2 tbsp ketchup (for topping)
  • For the Creamy Gravy:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • 1 tsp Dijon mustard (optional, for tang)
  • Salt and pepper to taste
  • 1 tsp soy sauce (optional, for umami depth)

Instructions
 

  • Step 1: Preheat the Oven : Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
  • Step 2: Prepare the Meat Mixture : In a large mixing bowl, combine ground beef, breadcrumbs, chopped onions, garlic, egg, milk, Worcestershire sauce, salt, pepper, paprika, and thyme. Mix gently with your hands until just combined—don’t overmix, or it will turn tough.
  • Step 3: Shape and Bake : Form the mixture into a loaf shape and place it in the prepared dish. Spread a thin layer of ketchup over the top for a glossy finish.
  • Bake for 60–70 minutes until the internal temperature reaches 160°F (70°C).
  • Step 4: Prepare the Creamy Gravy : While the meatloaf bakes: In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute to create a roux. Gradually whisk in beef broth, ensuring no lumps remain. Add heavy cream and simmer until the gravy thickens. Season with salt, pepper, soy sauce, and Dijon mustard.
  • Step 5: Rest and Serve : Allow the meatloaf to rest for 10 minutes after baking before slicing.
  • Serve thick slices drizzled generously with the creamy gravy.
