Ingredients
  

  • For the Scones:
  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional, for extra flavor)
  • 1 tsp sugar (optional, balances flavors)
  • 4 tbsp (60g) cold unsalted butter, cubed
  • 1 cup (100g) grated cheese (Cheddar, Parmesan, or a mix)
  • 2 tbsp fresh herbs, finely chopped (such as parsley, chives, or thyme)
  • ¾ cup (180ml) milk or buttermilk, plus a little extra for brushing
  • 1 egg (optional, for richer texture)
  • For Topping:
  • 2 tbsp grated cheese (for sprinkling)
  • 1 tsp fresh herbs, for garnish

Instructions
 

  • Step 1: Preheat the Oven : Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Step 2: Prepare the Dry Mixture : In a large bowl, whisk together flour, baking powder, salt, pepper, and (if using) garlic powder and sugar.
  • Step 3: Add Butter : Add cold butter cubes into the flour mixture. Using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles coarse breadcrumbs.
  • (The key is to keep the butter cold for flakiness.)
  • Step 4: Add Cheese and Herbs : Stir in grated cheese and chopped herbs. Toss gently to combine.
  • Step 5: Add Wet Ingredients : Make a well in the center and pour in milk (and beaten egg if using). Mix gently with a fork or spatula until the dough just comes together.
  • (Do not overmix — overworking makes the scones tough.)
  • Step 6: Shape and Cut : Transfer the dough to a lightly floured surface. Gently pat or roll out to about ½ inch (1.2 cm) thickness. Use a small round cutter or knife to cut mini scones.
  • Step 7: Prepare for Baking Place the scones on the prepared tray. Brush the tops with milk and sprinkle a little grated cheese and herbs on top.
  • Step 8: Bake : Bake for 12–15 minutes, or until the scones are puffed and golden brown. Remove from the oven and cool slightly on a wire rack.
