- 4 small flour tortillas 6-inch or 2 large tortillas cut into halves
- 1 cup shredded cheese cheddar, mozzarella, or Mexican blend
- ½ cup bell peppers finely diced
- ½ cup zucchini or yellow squash finely diced
- ¼ cup red onion finely diced
- ½ cup mushrooms finely diced
- 1 teaspoon olive oil
- Salt and black pepper to taste
- Optional toppings: sour cream salsa, guacamole, chopped cilantro
Prepare the Vegetables
Heat olive oil in a skillet over medium heat. Add bell peppers, zucchini, mushrooms, and onion. Sauté for 4–5 minutes until tender. Season with salt and pepper. Remove from heat.
Assemble the Quesadillas
Place tortillas on a flat surface.
Sprinkle a layer of shredded cheese over half of each tortilla.
Spread the sautéed vegetables over the cheese.
Add another layer of cheese on top of vegetables.
Fold tortillas in half to create a half-moon shape.
Cook the Mini Bites
Heat a nonstick skillet over medium heat.
Place quesadilla wedges in the skillet. Cook 2–3 minutes per side until golden brown and cheese is melted.
Remove and let cool slightly.
