Ingredients
  

  • 4 small flour tortillas 6-inch or 2 large tortillas cut into halves
  • 1 cup shredded cheese cheddar, mozzarella, or Mexican blend
  • ½ cup bell peppers finely diced
  • ½ cup zucchini or yellow squash finely diced
  • ¼ cup red onion finely diced
  • ½ cup mushrooms finely diced
  • 1 teaspoon olive oil
  • Salt and black pepper to taste
  • Optional toppings: sour cream salsa, guacamole, chopped cilantro

Instructions
 

Prepare the Vegetables

  • Heat olive oil in a skillet over medium heat. Add bell peppers, zucchini, mushrooms, and onion. Sauté for 4–5 minutes until tender. Season with salt and pepper. Remove from heat.

Assemble the Quesadillas

  • Place tortillas on a flat surface.
  • Sprinkle a layer of shredded cheese over half of each tortilla.
  • Spread the sautéed vegetables over the cheese.
  • Add another layer of cheese on top of vegetables.
  • Fold tortillas in half to create a half-moon shape.

Cut Into Bites

  • For mini bites, use a knife or pizza cutter to cut each quesadilla into 3–4 wedges.

Cook the Mini Bites

  • Heat a nonstick skillet over medium heat.
  • Place quesadilla wedges in the skillet. Cook 2–3 minutes per side until golden brown and cheese is melted.
  • Remove and let cool slightly.

Serve

  • Arrange on a platter and serve with sour cream, salsa, guacamole, or your favorite dips.
