Ingredients
  

  • 1 cup rolled oats or oat flour
  • 1 scoop vanilla or chocolate protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon optional
  • Pinch of salt
  • 2 tablespoons peanut butter creamy or chunky
  • 1 large egg
  • ½ cup milk dairy or non-dairy
  • 1 teaspoon vanilla extract
  • 1 –2 teaspoons honey or maple syrup optional, for sweetness
  • Coconut oil or butter for cooking

Optional toppings:

  • Sliced bananas
  • Fresh berries
  • Nut butter drizzle
  • Maple syrup
  • Chopped nuts or chocolate chips

Instructions
 

Step 1: Prepare Oat Flour (if needed)

  • If using rolled oats, blend 1 cup in a food processor or blender for 30–60 seconds until it forms a fine flour.

Step 2: Mix Dry Ingredients

  • In a bowl, combine oat flour, protein powder, baking powder, cinnamon, and salt. Stir well to combine.

Step 3: Mix Wet Ingredients

  • In another bowl, whisk egg, milk, peanut butter, vanilla, and honey/maple syrup until smooth and creamy.

Step 4: Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the dry ingredients. Mix until just combined. The batter should be slightly thick but pourable.

Step 5: Cook the Pancakes

  • Heat a nonstick skillet over medium heat. Lightly grease with coconut oil or butter.
  • Pour ¼ cup of batter per pancake. Cook 2–3 minutes until bubbles form on top and edges look set. Flip and cook another 1–2 minutes until golden brown.

Step 6: Serve

  • Stack pancakes on a plate. Add sliced bananas, berries, a drizzle of peanut butter, or a splash of maple syrup. Serve warm.
