Ingredients
  

  • 2 lbs (900 g) russet or Yukon gold potatoes, peeled and cut into chunks
  • 1/2 cup pumpkin puree (canned or homemade)
  • 4 tbsp unsalted butter
  • 1/4 cup milk or cream
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Optional garnish: chopped fresh parsley or thyme

Instructions
 

  • Prepare Potatoes : Peel and cut potatoes into evenly sized chunks for uniform cooking.
  • Boil Potatoes : Place potatoes in a large pot, cover with salted water, and bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
  • Drain u0026 Return : Drain potatoes and return them to the pot or a large mixing bowl.
  • Brown Butter : In a small saucepan, melt 4 tbsp butter over medium heat. Continue cooking, swirling occasionally, until butter turns golden brown and releases a nutty aroma. Remove from heat.
  • Mash u0026 Mix : Mash the cooked potatoes using a potato masher or fork. Add pumpkin puree and brown butter, then stir to combine.
  • Milk u0026 Seasoning : Pour in milk or cream, season with salt and black pepper, and stir until smooth and creamy. Adjust seasoning to taste.
  • Serve : Transfer mashed potatoes to a serving dish, garnish with chopped parsley or thyme, and serve warm.
