Ingredients
  

  • For the Turkey Breast:
  • 3–4 lb (1.4–1.8 kg) bone-in or boneless turkey breast
  • 2 tbsp olive oil or melted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • 1 medium onion, quartered
  • 2–3 cloves garlic, smashed
  • 1 cup low-sodium chicken or turkey broth
  • For the Homemade Gravy:
  • Pan drippings from roasted turkey
  • 2 tbsp all-purpose flour
  • 1 cup chicken or turkey broth (or as needed)
  • Salt and black pepper, to taste

Instructions
 

  • Preheat Oven : Preheat your oven to 375°F (190°C).
  • Prepare Turkey : Pat the turkey breast dry with paper towels. Rub the olive oil or melted butter evenly over the surface. Season with salt, black pepper, garlic powder, thyme, rosemary, and paprika.
  • Prepare Roasting Pan : Place quartered onion and smashed garlic in the bottom of a roasting pan. Pour 1 cup of chicken or turkey broth into the pan to keep the meat moist. Place turkey breast on top.
  • Roast Turkey : Roast uncovered for 1 hour 15 minutes to 1 hour 30 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C). Baste occasionally with pan juices for extra flavor.
  • Rest Turkey : Remove the turkey from the oven, cover loosely with foil, and let it rest for 15 minutes. This helps the juices redistribute for a moist roast.
  • Prepare Gravy : Pour pan drippings into a saucepan, reserving about 2 tbsp fat. Whisk in 2 tbsp flour to make a roux. Gradually whisk in 1 cup broth, stirring constantly until thickened. Season with salt and pepper.
