Ingredients
  

  • For the Shrimp:
  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ tsp crushed red pepper flakes (optional)
  • Juice of ½ lemon
  • For the Zucchini Noodles:
  • 3 medium zucchinis, spiralized
  • 1 tbsp olive oil
  • Salt, to taste
  • For Garnish:
  • 2 tbsp fresh parsley, chopped
  • Grated Parmesan cheese (optional)
  • Lemon wedges, for serving

Instructions
 

  • Step 1: Prepare the Zucchini Noodles : Use a spiralizer to turn zucchinis into noodles. Pat them dry with paper towels to remove excess moisture. This step helps prevent soggy noodles later.
  • Step 2: Cook the Shrimp : In a large skillet, heat 1 tbsp olive oil and 2 tbsp butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add shrimp in a single layer, season with salt, pepper, and red pepper flakes, and cook for 2–3 minutes per side or until pink and opaque. Squeeze in lemon juice. Remove shrimp and set aside.
  • Step 3: Sauté the Zucchini Noodles : In the same skillet, add 1 tbsp olive oil and the zucchini noodles. Sauté for 2–3 minutes, stirring occasionally, until just tender (don’t overcook — they should stay slightly crisp). Season lightly with salt.
  • Step 4: Combine and Toss : Return the shrimp to the skillet with the zucchini noodles. Toss everything together in the garlic butter sauce for 1 minute until heated through. Add parsley for freshness.
  • Step 5: Serve : Plate the noodles, top with shrimp, and drizzle with any remaining garlic butter sauce. Add Parmesan and lemon wedges if desired.
