Step 1: Preheat the Oven : Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
Step 2: Prepare the Meatloaf Mixture : In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, garlic, egg, milk, soy sauce, sweet chili sauce, salt, and pepper. Mix gently using your hands or a spatula — just until combined. (Overmixing can make the loaf tough.)
Step 3: Shape and Place in Pan : Shape the mixture into a loaf and place it in the prepared pan or on a foil-lined baking sheet.
Step 4: Make the Glaze : In a small bowl, whisk together sweet chili sauce, ketchup, brown sugar, and rice vinegar. Brush half of this glaze over the top of the meatloaf.
Step 5: Bake : Bake the meatloaf for 45 minutes. Remove from oven, brush with the remaining glaze, and bake another 10–15 minutes, until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
Step 6: Rest and Serve : Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped green onions and sesame seeds for a vibrant finish.
