Ingredients
  

  • For the Meatloaf:
  • 1 ½ lbs (680g) ground beef (or a mix of beef and pork)
  • ½ cup breadcrumbs (plain or panko)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 2 tbsp soy sauce
  • 2 tbsp sweet chili sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • For the Glaze:
  • ½ cup Thai sweet chili sauce
  • 1 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp rice vinegar (optional, for tanginess)
  • Optional Garnish:
  • Chopped green onions
  • Toasted sesame seeds

Instructions
 

  • Step 1: Preheat the Oven : Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
  • Step 2: Prepare the Meatloaf Mixture : In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, garlic, egg, milk, soy sauce, sweet chili sauce, salt, and pepper. Mix gently using your hands or a spatula — just until combined. (Overmixing can make the loaf tough.)
  • Step 3: Shape and Place in Pan : Shape the mixture into a loaf and place it in the prepared pan or on a foil-lined baking sheet.
  • Step 4: Make the Glaze : In a small bowl, whisk together sweet chili sauce, ketchup, brown sugar, and rice vinegar. Brush half of this glaze over the top of the meatloaf.
  • Step 5: Bake : Bake the meatloaf for 45 minutes. Remove from oven, brush with the remaining glaze, and bake another 10–15 minutes, until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
  • Step 6: Rest and Serve : Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped green onions and sesame seeds for a vibrant finish.
