For the Chili:
- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 1 tsp ground cumin
- ½ tsp dried oregano
- ½ tsp chili powder
- ¼ tsp cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
- 2 cups shredded cooked chicken (rotisserie or poached)
- 3 cups chicken broth
- ½ cup frozen or canned corn (optional)
- ½ cup sour cream or Greek yogurt
- ½ cup half-and-half or heavy cream
- Juice of 1 lime
Optional Toppings:
- Shredded cheese (Monterey Jack or cheddar)
- Diced avocado
- Fresh cilantro
- Crushed tortilla chips
- Jalapeño slices
- Extra lime wedges
Sauté the Aromatics In a large pot or Dutch oven, heat oil over medium heat. Add diced onion and cook for 4–5 minutes until soft and translucent. Stir in garlic and cook for 1 minute until fragrant.
Add Spices and Chilies Add green chilies, cumin, oregano, chili powder, cayenne (if using), salt, and pepper. Stir and cook for 1–2 minutes to toast the spices.
Add Beans, Chicken, and Broth Stir in white beans, shredded chicken, corn (if using), and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes.
Add Creaminess Turn off heat and stir in sour cream and half-and-half (or heavy cream). Add lime juice and stir well. Taste and adjust seasoning if needed.
Serve Ladle into bowls and add desired toppings like cheese, cilantro, or avocado.
